BUTTER MOCHI/ OR BIBINGKA

500g glutinous rice flour
400g sugar
1 tablespoon baking powder
A pinch or 2 of salt
125g melted butter
4 eggs beaten
400ml coconut milk
400ml full fat cream or evaporated milk
2 tsp vanilla (optional)

1. Line your baking tray, mine is approx. 25 x 30 x 5cm, preheat oven to 160°c
2. Combine dry ingredients
3. Combine wet ingredients
4. Slowly add wet to dry with a whisk
5. Pour into lined tray and pop into hot oven for 45-60mins
6. It will be wobbly but shouldn’t be wet in the middle and it will rise and then fall, don’t worry!

7. Eat whilst hot, or if you do cool it, warm up to serve :^)
